Parmesan and Zucchini Crusted Chicken

Ingredients

  • 2 Large Zucchini

  • 4 Chicken Breasts

  • 2/3 cup Parmesan Cheese (grated)

  • Cayenne Pepper

  • Garlic Powder

  • Olive Oil (~4 tsp)

  • Salt

  • Black Pepper

Steps

1. Preheat your oven to 400°F.

Zucchini Crust

2. As your oven is preheating, grate the zucchini using the shredded side of a cheese grater (you can also use a vegetable spiralizer, if you have one).


3. Once grated, place the zucchini strings on a large paper towel. Pull the corners together and squeeze the paper towel to release as much moisture as possible from the zucchini.


let's be Frank: Be sure to take as much moisture as possible out of the zucchini, otherwise you'll be left with a mushy "crust" on the chicken. I also recommend doing this step over the sink to avoid a countertop clean-up.

4. Place the zucchini in a bowl, season with salt and pepper to your liking. Add in the Parmesan and mix thoroughly. Set aside.

Baked Chicken

5. Place a chicken breast on a cutting board and pound the chicken breast with a mallet or rolling pin. Keep flattening the chicken breast until it is about ½ inch thick. Repeat the process for the additional chicken breasts.


let's be Frank: Ideally it would be on a wooden cutting board or something sturdy. Do not place the chicken breasts on any breakable surface or directly on your countertop. If you don’t have a mallet or rolling pin, a heavy frying pan could work as a substitute. 

6. Place the chicken breasts on a baking pan, ensuring that both sides are lightly coated with olive oil. Season both sides of the chicken breasts with a dusting of cayenne pepper and garlic powder. Allow chicken breasts to cook for about 13-15 minutes.


let's be Frank: The length of the cooking time will depend on how flat you have made your chicken breasts. While cayenne pepper and garlic powder are recommended, these can easily be swapped out for your preferred spices. No need to add salt, as the Parmesan will take care of that. 

7. After the chicken breasts have cooked, spread the Zucchini mixture evenly on top. Turn the oven off and put the broiler on High. Broil for about 2minutes until the Zucchini has developed a nice crust. Remove from oven/broiler and enjoy!


let's be Frank: If you lack a broiler, you can simply turn the oven up to a higher temperature (above 480°F).
